Glaze Citrus Fruits

Eaten raw, it creates acid from citrus fruits, a great cook, even for them, but with citrus icing sugar, making them ideal for salads, ice cream, yogurt or cereal, or beside the sea water from the meat and vegetables. Choose your favorite glass cleaner citrus: grapefruit, tangerines, oranges, lemons, limes and kumquats, small exotic. Ginger makes an appearance in this recipe as a foil for the hot taste of fresh citrus acidity, but could not feel free, if desired.

Mix honey, brown sugar, ginger and lemon zest in a saucepan over medium heat until sugar dissolves.

Lemon juice and cook over medium heat until mixture is thick, about 10 or 15 minutes.

Serve drinks and citrus glaze in the pan, still hot as a sauce for desserts, salads or meats, or as a warm salad.
